Volare has been providing the city of Hamilton with delicious baked sourdoughs and pastries since 2009. From humble beginnings, Volare now has multiple stores, a wholesale market and in 2023, Volare moved down the road as the bakery of choice for the bustling Made Market precinct. Throughout their growth, the focus at Volare has always remained on quality and community.

The ethos at Volare is simple but effective— small batch baking, to keep everything fresh and flavourful. They stick to traditional methods, using top-notch ingredients, skilled craftsmanship, and plenty of time, which means no need for unwanted additives or preservatives. The result? Some of the best bread and pastries you’ll find.

The design of their current space is a mix of old and new. Some original elements have been retained, including the brickwork and open bread shelving, but their recent rebrand has made way for some changes. Big windows open out onto the street, making it a great spot to grab a coffee and enjoy some fresh pastries at the communal table outside. Inside, you can watch the baristas in action and choose from a tempting display of freshly baked goodies.

When it comes to their offerings, Volare has something for everyone. Their sourdough breads are a crowd favourite, with the San Francisco, Olive and Thyme, Volare Grain, and Turmeric Loaf being top picks. Their pastries are just as popular (especially the   award-winning custard square and almond croissant) and if you’re in the mood for something savoury, their sausage rolls and pies are hard to beat. There are coffee beans from Ozone, gluten-free options from Lucy’s, and they’ve recently launched some cool merch.

At Volare, they’re doing more than serving up baked goods—they’re helping put Hamilton’s food scene on the map. And as a key player at Made Markets, they’re making sure everyone knows it.
