Inspired by the phrase “come hell or highwater” – a nod to resilience, celebration, and climate awareness – Highwater sits near the original high-water mark on Cuba Street, where Wellington’s shoreline once reached in the city’s early days. Head chef and co-owner Alric Hansen champions traditional techniques and charcoal oven cooking, with nearly everything made in-house and a strong focus on local, ethical, and sustainable produce.

The seasonal menu celebrates quality ingredients and bold, flavour-driven cooking, with standout dishes including crudo, flounder, fresh oysters, and the restaurant’s much-loved lamb dish. Guests can dine à la carte or choose from a range of sharing-style set menus, including the popular Chef’s Menu.
