Step inside Saigon ’60s and be instantly transported back to the golden era of 1960s Saigon, when French charm and Vietnamese flair intertwined in the city’s streets, kitchens, and cafés. Here in Hamilton, that nostalgia takes shape in the form of crisp, handmade baguettes stuffed for the perfect Bánh Mì, and rich, aromatic Vietnamese coffee that could probably stack up against its competition in Ho Chi Minh City, conveniently housed within a warm and vibrant eatery.

True to its roots, Saigon ’60s is inspired by the vibrancy of Vietnamese street food: quick, hot, and bursting with life. The Hamilton location captures the brand’s signature warmth with retro Vietnamese details and a relaxed, family-friendly vibe, even featuring a children’s bookshelf to keep the little ones entertained.

The journey began in 2018 when co-founders Betty and Victor took over a Rotorua bakery and transformed it into the town’s go-to Vietnamese spot. Neither had experience in cooking or running a restaurant and, perhaps, this was their secret ingredient. With no “rules” to hold them back, they learned on the fly, shaping a menu and atmosphere that resonated with locals. Fast forward, and the pair have brought their vision to Hamilton, a city they fell for during their student days. In May 2025, the Hamilton outpost opened its doors and has been quickly embraced by both loyal Rotorua regulars and their curious new Hamilton-based neighbours.

The motto, “Authentic Vietnamese Food Your Way,” says it all: food that honours tradition while being open to your personal tastes. The menu reflects years of refinement: fully customisable Southern-style Pho, Egg Coffee so luscious it’s been called the country’s best, giant crispy Vietnamese Pancakes, and Spicy Lemongrass Noodle Soup for those wanting a comforting heat kick. Dietary needs? No problem, vegan, gluten-free, and dairy-free diners are all looked after without compromise.

In a world of rushed meals, Saigon ’60s stands out as a place where quick food doesn’t mean soulless food. Here, every cup, every bowl, every bite carries the spirit of Saigon, bright, bold, and yours to make your own. Hamilton now has a little slice of 1960s Vietnam, and the locals couldn’t be happier.
