Big flavours, playful energy, and dishes designed for sharing over good times - Vaibhav Vishen’s Chaat Street has carved out a space all of its own. What began as a Wellington On a Plate pop-up has quickly turned into a permanent fixture in Wellington’s dining scene, a go-to for cuisine enthusiasts looking for something a little off the beaten track.
The vibe that Chaat Street aims for is that of a bustling Indian street food market, and it achieves this effortlessly throughout Willis Street space. Rich, vibrant colours and warm lighting create an atmosphere that feels lively and transportive rather than overly themed. And with versatile seating arrangements, from intimate tables for two to larger settings to fit all your friends, it’s a space that welcomes any occasion.
While invoking traditional Indian flavours, the menu adopts its own bold style, favouring a tapas-style approach where dishes arrive as they’re ready. The Aloo Tikki Chaat layers skillet potato, crunchy lentils, yoghurt, and tamarind and mint chutneys into something tangy, crisp, and deeply comforting. Dahi Puri arrives as delicate shells packed with sweet yoghurt and chutneys, designed to be eaten in one bite while the crunch still holds. Then there’s the Kashmir Kanti - tender lamb marinated for hours and pan-tossed with Kashmiri chillies, onions, and coriander - rich with spice and beautifully balanced.
Even the desserts and beverages tell a story. The Chai Brulee is a nod to Pondicherry’s French influence, while drinks like tamarind margaritas, ginger chilli cocktails, and traditional badam milk reflect the same spirit of experimentation.
Chaat Street doesn’t simply recreate the pluralistic Indian food traditions. It traces how they’ve travelled, changed, and picked up stories along the way, culminating in a dining experience that feels subtly familiar yet elevated above the norm.
